There are certain foods for which I have never acquired a taste.

One of them is sweet potatoes.

My husband, on the other hand, loves them. Therefore, I feel obligated to fix them every once in a while. I never look forward to that because I find sweet potatoes difficult to work with and cut.

Recently; however, I discovered Betty Crocker's Sweet Potato Mashed Potatoes in a box. I decided to give them a try and I'm glad I did.

First of all, these potatoes are easy to make. They can be cooked on top of the stove or inside the microwave.

To microwave them, mix ¾ cup of milk, ¾ cup of hot water and 2 tablespoons of butter. Heat those ingredients until the butter is melted. Then stir in one packet of Betty Crocker's Sweet Potato Mashed Potatoes.

Mix the ingredients together well and continue microwaving on high heat for roughly five minutes. Once the timer goes off, let the potatoes rest for about one more minute. Then stir gently and serve.

To fix the potatoes on the stovetop, mix ¾ cup of milk, ¾ cup of water and 2 tablespoons of butter together and bring the liquids to a boil. Remove the pan from the heat and stir in one packet of Betty Crocker's Sweet Potato Mashed Potatoes.

Whip the ingredients together until the potatoes thicken. Let them rest for one minute and then serve.

Either way you fix them, Betty Crocker's Sweet Potato Mashed Potatoes can be fixed in less than 30 minutes. They can be served as is or jazzed up with breadcrumbs, marshmallows, brown sugar crust or any other topping of your choice.

For me, these potatoes are perfect. They satisfy my husband's need for sweet potatoes without me having to suffer through their "from scratch" preparation.

Here is my summary review:

Taste: My husband loves them and that's all that matters to me.

Freshness: They are dehydrated so, of course, there is a bit of freshness lacking. But Betty Crocker's Sweet Potato Mashed Potatoes will still do in a pinch.

Nutrition:  Like the potatoes themselves, this substitute has both pros and cons. There is no denying the high carbohydrate content. Therefore, those who are watching their carb intake may prefer to steer clear. On the other hand, Betty Crocker's Sweet Potato Mashed Potatoes are rich in potassium and other key vitamins and nutrients.

Reputation: When it comes to cooking, it doesn't get much better than Betty Crocker. She wrote the book, so to speak, on home food preparation in simple, easy to fix foods.

Packaging:  The potatoes come in Betty Crocker's famous red box. In this case with orange and brown trim. Therefore, the packaging is very tonal. However, that in itself calls attention to it and makes it simple to find on the store shelf. Betty's spoon logo is pictured at the top of the box and a picture of the finished potatoes makes the dish look appetizing.

Ease of storage: The fox isn't too large at 7 ½" in height by almost 5" in width and 2" in depth. It should fit into most kitchen cabinets and pantries.

Availability: Betty Crocker products are sold by all major grocery stores and even a few mom and pop locations. They are also sold in discount department stores that have a food section and in a few drug stores that have the same.

Product purchase probability: I will definitely keep these on hand for my husband's routine sweet potato fix.

Final rating: It doesn't get much better than that.
